Recently, I have been making a lot of bread. And, I came up with this cheesy garlic breadsticks recipe by accident. Surprisingly, it turned out fluffy, soft and delicious garlic cheese sticks just like the one I have tried in Hong Kong bakeries.
This is the best homemade cheesy garlic breadsticks because it is made from scratch. Also, the dough is the key, not like regular pizza dough. Therefore, it makes these garlic cheese breadsticks tasty, fluffy and soft. Besides, a fresh dough covered with garlic butter, herb and loaded with melted mozzarella cheese. My kids love this homemade cheesy garlic breadsticks and they said it's better than at a store!
What goes with homemade cheesy garlic breadsticks?

- Let the dough rise for 45 minutes to 1 hour at room temperature. My trick is to preheat the oven to 200F and turn off. Then, put the dough in the oven covered with a wet cloth and let it rise for 20-30 minutes. It’s faster, so you don't need to wait too long.
- Divide the dough into 13 pieces and roll it into a long rope shape.
- Put a parchment paper on a cookie sheet and spray some oil. Lay the long rope shaped dough on the tray cover with a wet cloth and let it rise for 15-30 minutes. (I preheated the oven to 200F and turned it off. Then, let them rise in the oven again.)
- Melt butter in the microwave for 20 seconds and mix salt and garlic powder.
- After the dough rises, brush melted garlic butter, sprinkle with dried parsley and mozzarella cheese.
- Preheat for 400 F and bake for 12-16 minutes. (I did around 15 minutes.)

2. While it's waiting, put 3 cups of bread flour, 1 and ¾ teaspoons of salt, ½ teaspoon of garlic powder, ½ tablespoon of vital wheat gluten and ½ tablespoons of dough enhancer into a big bowl and mix them well.

3. After that, turn on the mixer at the lowest setting #1, slowly add the flour mixture into the yeast mixture. When the dough is coming together, increase the higher setting to #3. Let it run for 5 minutes.

4. Take the dough out and put it into a bowl and cover with a wet cloth. Let the dough rise for 45 minutes to an hour at room temperature. (My trick to speed up the time for dough rising is to preheat the oven at 200F and turn off. Then, put the dough in the oven covered with a wet cloth and let it rise for 20-30 minutes.)

5. After, the dough rises double in size.

6. Next, divide the dough into 13 pieces.

7. Roll the pieces into a long rope shape.

8. Put a parchment paper on a cookie sheet and spray some oil. Then, lay the rolled dough on the tray and cover with a wet cloth to let them rise again. (My trick to speed up the time for dough rising is to preheat an oven for 200F and turn off. Then, put the dough in the oven covered with a wet cloth and let it rise for 15-30 minutes.)
Topping:

9. In the meantime, melt 4 tablespoons of butter in a microwave for 20 seconds. Then, add 1 teaspoon of garlic powder, ¼ teaspoon of salt and mix well.

10. The dough rises again and doubles its size. Preheat the oven at 400 F.

11. Brush the melted garlic butter from step 9 on the dough.

12. After, sprinkle 2 teaspoons of dried parsley on the dough.

13. The following, sprinkle one cup of mozzarella cheese on the dough. And, bake them at 400F for 12-16 minutes. (I did it for around 15 minutes.)
