What is black sesame soup (黑芝麻糊)?

Black sesame paste soup is popular among East-Asian and Chinese. Also, black sesame dessert is typically served hot. But, some like to serve them cold, especially in summer. In Cantonese it is called tong sui, or sweet soup like sweet red bean soup, sweet mung bean soup, black glutinous rice dessert and taro sago.

Normally, black sesame soup can be purchased in powder form that already has sugar in it at regular Asian stores and you only need to add hot water. However, this recipe has step by step instructions to show you how to make black sesame dessert soup from scratch.

What is black sesame good for you?

Black sesame has rich nutrition like iron, magnesium, manganese, copper, calcium, vitamin B1, vitamin E, phytic acid, phytosterols and sesamin. In Chinese medicine practices, black sesame is used for warming the body, replenishing blood, relaxing bowels and nourishing hair.

What are the ingredients in black sesame paste soup?

In general, black sesame paste soup the main ingredients are black sesame seeds, rice, sugar and water. In this Chinese black sesame soup dessert recipe, I like to add coconut milk which gives more flavor to this sweet soup dessert.

Cooking tips for how to make black sesame sweet soup:

    • Wash and rinse the black sesame seeds. Then, drain them well.
    • Turn on a small fire, stir fry the washed black sesame seeds until it's dry and the aroma from stir frying the black sesame seeds. However, don't burn it.
    • Put sesame seeds into a blender and add one cup of water. Blend it for a few seconds (10-12 seconds). Then, add another cup of water and continue to blend it until smooth (around 30 seconds to a minute) depending on the power of your blender. (The best is to use a powerful or nicer blender. If not, using a regular blender is fine. It just takes a little bit longer to blend until smooth. And, I used a regular blender.)
    • I found out using rice flour is easier than rice.
    • You can add more water if you don't like the viscosity. In this Chinese black sesame soup dessert recipe, I added some coconut milk because the taste is even better with coconut flavor.
    • Remember to keep stirring the mixture and turn on a small fire until the mixture thickens.

    FAQs:

Do I need to wash black sesame seeds?

Yes, the best to wash them in bowl with water and rinse them to remove some dust and impurity.

Do you need to dry the sesame seeds after washing them?

Some people like to stir fry them in a pan with lower heat to dry the seeds and it can release the fragrance from the black sesame seeds. However, don't burn it.

We grew up eating this dessert made from the instant packets. I never thought to make it from scratch but doing so enabled me to control the sugar content. I found that ¼ cup sugar was perfect for me.

If you can find it, Asian and online stores sell ground roasted black sesame seeds. I purchased the Sunway brand and it made the prep and cleanup so much easier since I didn’t have to involve my blender.

For anyone interested in making this with already ground black sesame seeds: Add ⅔ cup black sesame powder to a 4 qt. saucepan and whisk in 1 cup water. Whisk in the ½ cup rice flour before incorporating a second cup of water. Heat the mixture on medium heat, whisking constantly but gently. When it thickens, add one final cup of water (so I used 3 cups water total). Whisk in the desired amount of granulated sugar (¼ cup was plenty sweet for me) and 1½ cups coconut milk (or in my case, 1 cup coconut cream since I didn’t have coconut milk on hand). Whisk constantly but gently and remove from heat when mixture begins to bubble again.
