Papaya contains enzymes,papain and chymopapain, which are proteolytic enzymes. These enzymes are effective at breaking down proteins. When papaya is mixed with milk, these enzymes can begin to break down the proteins in the milk, causing it to curdle.
It is because milk contains proteins, casein, which can be broken down by enzymes like papain. When the proteins in milk are broken down, they may form curds, resulting in a curdled appearance and texture.
The process of curdling can be accelerated by factors such as the acidity of the papaya, the temperature at which the mixture is stored, and the concentration of enzymes present in the papaya.
How to prevent papaya from curdling milk?
Use fully ripe papaya because ripe papaya generally contains fewer active enzymes compared to unripe papaya, which can reduce the likelihood of curdling. Also, limit mixing time to minimize the exposure of milk proteins to the proteolytic enzymes in papaya.
