Not only is ham fried rice simple, easy and tasty, but also you can use the leftovers wisely.     What is ham fried rice?

    Fried rice originated from China and now is a very common Chinese dish around the world. Most American Chinese restaurants serve spam or ham fried rice in their menu or as a side.

    However, the idea of a fried rice dish is to use leftover rice wisely and not waste food. Thus, fried rice made from leftover rice and stir fried with vegetables, eggs & meat.

    Besides, Asians like to add shrimp and char siu, Chinese BBQ pork, for fried rice, to make a famous Chinese Yangzhou fried rice.

    How to make the best ham fried rice?

    To make the best ham fried rice is to make sure every rice is covered by eggs. Hence, in Chinese we called them golden rice. When you are pouring the beaten eggs over the rice, you have to stir fry the rice quickly enough to cover rice with eggs. Then, add the stir fried ham, vegetables and seasonings.

    Besides, for authentic Chinese fried rice, we seldom use soy sauce to stir fry the rice. It is a little bit different from a Chinese American chain restaurant, Panda Express. 

    What are the ingredients for ham fried rice?

    In this authentic Chinese ham fried rice recipe, I use a few ingredients: ham, cooked leftover rice, eggs, frozen mixed vegetables, green onion, garlic powder vegetable oil and salt.

    Cooking tips for how to cook ham fried rice:

    • Use a non-stick pan because you can use less oil and not stick to the pan.
    • Stir fried ham and frozen vegetables then set them aside.
    • Use leftover and refrigerated rice.
    • Stir fry and break down the rice to prevent it coming together before adding the eggs.
    • Make sure every rice is covered by eggs.

    What kind of rice should I use?


    There are so many different ways to make fried rice. The best is to use leftover and refrigerated cooked rice because it is easier and not sticky and mushy when you stir fry them. Also, I prefer to use jasmine rice. 

    How do you keep fried rice fresh?


    After stir fry ham fried rice, put them in a container with a lid to keep it moist.

    Can you leave fried rice out overnight?


    I don't recommend leaving ham fried rice out overnight because it contains meat. The best is to refrigerate it and warm it up in the microwave.

    Instructions for how to make ham fried rice:

    1. Wash and cut 3 sticks of green onion.

    2. Then, cut 2 slices, 8oz of ham into cubes.

    3. Crack 3 eggs into a bowl.

    4. Beat the eggs with a fork until it is well mixed.

    5. Pour ½ tablespoon of vegetable oil into the wok. Then, turn on medium small fire.

    6. Add 2 cups of frozen mixed vegetables into the wok. Stir fry it for 1-2 minutes.

    7. After that, add the cut ham from step 2 into the wok.

    8. Keep stir frying for 1-2 minutes. Then, set it aside.

    9. Pour ½ tablespoon of vegetable oil into the wok. Add 5 cups of cooked leftover rice, stir fry and break down the rice to prevent it coming together.

    10. Slowly pour the beaten eggs from step 4. Keep stir frying the rice and adding the eggs, to make sure the rice is covered with eggs.

    11. The following, add ½ teaspoon of salt and ½ teaspoon of garlic powder. Stir fry the rice and mix the seasoning well.

    12. When the rice is ready, add the cooked mixed vegetable and ham from step 8. Stir fry and mix the rice, ham and vegetables well.

    13. Lastly, add the cut green onion from step 1. Stir fry it a little bit and turn off fire.

    • 2 slices Ham 8 oz
    • 2 cups Frozen mix vegetables
    • 3 Eggs
    • 3 sticks Green onion
    • 5 cups Cooked rice (leftover and refrigerated)
    • ½ teaspoon Garlic powder
    • ½ teaspoon Salt (add salt to your taste)
    • 1 tablespoon Vegetable oil ( ½ tablespoon for stir fry ham and ½ tablespoons for stir fry rice)
