    Do you have a lot of leftover ham from Thanksgiving, Christmas or big feast and don't know what to make? Try out this authentic and the best ham fried rice recipe. Not only ham fried rice is simple, easy and tasty, but also can use the leftover wisely.

    What is fried rice?

    Fried Rice originated from China and now is a very common Chinese dish around the world. Most of American Chinese restaurants serve fried rice in their menu or as a side.

    However, the idea of fried rice dish is to use leftover rice wisely and don't waste food. Thus, fried rice made from leftover rice and stir fried with vegetables, eggs & meat.

    Asians like to add shrimps and pork for fried rice, Yangzhou fried rice is one of them. 

    What kind of rice should I use?

    There are so many different ways to make fried rice. The best is to use leftover and refrigerated cooked rice because it is easier and not sticky and mushy when you stir fried them. Also, I prefer to use jasmine rice.

    How to make the best ham fried rice?

    To make the best ham fried rice is to make sure every rice covered by eggs. Hence, in Chinese we called them golden rice. When you are pouring the beaten eggs over the rice, you have to stir fried the rice quick enough to cover rice with eggs. Then, add the stir fried ham, vegetables and seasonings.

    Cooking tips for how to cook ham fried rice:

    • Use a non-stick pan because can use less oil and not stick to the pan
    • Stir fried ham and frozen vegetables then set them a side
    • Use leftover and refrigerated rice
    • Make sure every rice is covered by eggs

    After stir fried ham fried rice, put them in a container with a lid to keep it moist.

    Can you leave fried rice out overnight?

    I don't recommend to leave ham fried rice out overnight because it contains with meat. The best to refrigerate it and warm up in the microwave.

    2. Then add frozen mix vegetables and stir fried with ham for 2-3 minutes and set them a side.

    3.  Next, add vegetable oil and rice then stir fried or loose them up.adding egg to rice4. Beat the eggs in a bowl and pour the eggs over the rice.

    5. Stir fried eggs with the rice to make sure every rice is covered by eggs.

    6. After that, add ¼ teaspoon of garlic powder, ¼ teaspoon of salt (to your taste), cooked mix vegetables and ham to the fried rice and stir fried for few minuets.

    Ingredients

    • 1 cup Ham diced
    • 2 cups Frozen mix vegetables
    • 2 Eggs
    • 3 sticks Green onion
    • 5 cups Cooked rice (leftover and refrigerated)
    • ¼ teaspoon Garlic powder
    • ¼ teaspoon Salt (add salt to your taste)
    • 1 tablespoon Vegetable oil ( ½ tablespoon for stir fried ham and ½ tablespoons for rice)
