    Wonton noodle soup (雲吞麵) is a Classic Cantonese cuisine like HK style lo mein, braised beef ho fun, wonton soup, lobster yee mein, beef chow fun and soy sauce noodle. Authentic Hong Kong wonton noodle soup is often served in hot broth with fresh Cantonese egg noodles, wonton and leafy vegetables. This wonton noodle soup recipe is easy, delicious and great for lunch or dinner. Let’s learn how to make this wonton noodle soup with step by step photos and a video!

    What is wonton noodle soup (雲吞麵)?

    Wonton noodle soup (雲吞麵) is a classic Cantonese noodle dish. It is often served in hot broth with fresh Cantonese egg noodles, wonton and leafy vegetables. Also, it was a street food and later became very popular among cafes, Chinese restaurants and throughout southeast Asia. Besides, this is one of my favorite noodle soups. I hope you like this simple and delicious wonton noodle soup recipe.

    What kind of noodles are wonton noodles?

    Traditionally, wonton noodle soup uses fresh thin and small egg noodles. They are called wonton mee or wanton mein which is a Cantonese style yellow egg noodle. Also, they are commonly found in Chinese markets or Asian grocery stores. They are yellow in color due to the addition of egg and potassium carbonate & sodium bicarbonate solution to the dough which gives them a slightly chewy and springy texture.

    Cantonese egg noodles are an essential part of the dish because their delicate flavor complements the savory wontons and flavorful broth. The noodles absorb the broth's taste and make each mouthful of noodles a delight.

    What are the ingredients in Hong Kong wonton noodle soup? 

    In this wonton noodle soup recipe, the basic ingredients are fresh Cantonese egg noodles, vegetables, wonton, chicken broth and green onions.

    How to cook wonton noodles?

    Wonton mein always boils in water first and loosen up the noodles to get rid of some of the alkaline stuff. Then, rinse under cold water, so the noodles will be more elastic and chewy texture. But, remember not to over boil the noodles.

    Once the water is boiling, add the noodles and loosen up a little bit. Let it cook until the noodles are floating on top of water. That’s the sign to show the noodles are done and cooked.

    What kind of broth do you use for wonton noodle soup (雲吞麵)?

    Usually people use chicken and pork bones to boil the broth for many hours. However, I want to make it simple. Thus, I only use a can of chicken broth, warm up and pour over the noodles and wonton. If you have time, you can boil chicken broth from scratch and serve with the wonton mein.

    Cooking tips for how to make wonton noodle soup recipe:

    • Wrap the wonton and boil them until they are floating on top of water. After that, set them aside.
    • Boil water in a pot and cook wanton mee. The same way to cook wonton is to wait until the noodles are floating on top. Next, drain the wanton noodles and rinse under cold water.
    • Wash and cook lettuce in boiling water for a few seconds. Normally, I just put lettuce in hot boiling water and immerse it. Then, take them out quickly and rinse with cold water because you don’t want to over cook lettuce.
    • Lay cooked lettuce in a bowl, wonton mein and wonton. Lastly, boil and warm up chicken broth, pour hot soup over noodles and wonton.

    What kind of vegetable should I add?


    Most people like to add some leafy vegetables such as baby bok choy, choy sum, gai lan or lettuce to serve with wonton noodle soup (雲吞麵). This time I used lettuce because it's a very common vegetable and easy to find in regular grocery stores.  
    Normally, I just put lettuce in hot boiling water and immerse it. Then, take them out quickly and rinse with cold water because you don’t want to over cook lettuce.

    Can I freeze the wonton noodles?

    Yes, you can freeze wonton noodles. You can put the uncooked wonton noodles in a ziplock plastic bag and freeze them. When you are ready to cook them, thaw them in the refrigerator and let them thaw overnight. This gradual thawing helps preserve the noodles' texture. 

    Where do I buy wonton noodles and wonton wrappers?

    You can find wonton noodles and wonton wrappers in Asian grocery stores or Chinese markets. These items are commonly stocked in the noodle or refrigerated section of the store. If you don't have access to an Asian grocery store, you can also try looking for them in larger supermarkets that have a diverse selection of international foods.

    Instructions for how to make Hong Kong Cantonese style wonton noodle soup:

    1. Pour 4 cups of water into the pot and turn on medium fire, wait until the water is boiling.

    2. When the water is boiling, add the wrapped wonton (I cook 16 pieces, learn how to make wonton for wonton soup recipe). Let it cook until they all float on the top and make sure it’s cooked.

    3. After that, use a strainer to take out the wonton and set them aside.

    4. After taking out the cooked wonton from the pot, add the wanton noodles and loosen up. Let it cook until the noodles float on top of the water. (Don’t over cook the noodles.)

    5. Then, drain and rinse under cold water.

    6. Next, put the washed lettuce in the boiling water for a few seconds. After that, take them out quickly and rinse with cold water because you don’t want to over cook the lettuce.

    7. Lay 4 leaves of cooked lettuce into the bowl. (You can put more or less lettuce depending on your preference.)

    8. Put some cooked Cantonese egg noodles from step 5 into the bowl.

    9. The following step, put 8 pieces of cooked wonton from step 3 on the cooked Cantonese egg noodles.

    10. Pour 2 cans (14.5 oz each can) of chicken broth into the pot and turn on medium fire. Wait until the broth is bubbling or boiling.

    11. Lastly, pour the hot chicken broth from step 10 over the noodle and wonton. And, sprinkle some green onion on top of the noodle soup (this is optional).

    • ½ head Lettuce
    • 1 pack Fresh Cantonese egg noodles (4 small noodles, 15 oz)
    • 2 can Chicken broth (14.5 oz each)
    • 2 sticks Green onion (For topping)
    • 4 cups Water (For boil wonton, noodles and lettuce)

    INGREDIENTS FOR WONTON:

    • 1 pack Wonton wrappers (10 or 12 oz in a pack)

    WONTON FILLING:

    • 1 pound Ground pork
    • 1 bag Raw frozen shrimp    (12 oz, round 60-80 small shrimp)  
    • ¼ teaspoon Salt
    • 2 tablespoons Oyster sauce
    • 1 tablespoon Sesame oil
    • ¼ teaspoon White pepper
    • ½ teaspoon Garlic powder
    • 5 sticks Green onion (For filling)

    Instructions
