    What is Chinese steamed minced pork? 

    Steamed minced pork is a traditional and classic Cantonese dish. Also, it is a very authentic homemade style dish like garlic chives & eggs that not many Chinese restaurants will serve it. Chinese steamed minced pork is also called steamed pork patty or steamed pork cake. 

    My husband describes this dish as Chinese meatloaf. However, I think it is way better than regular meat loaf. This dish is mainly minced pork and usually mixes with other ingredients such as dried shiitake mushrooms, dried squid, water chestnuts and preserved vegetables, like preserved mustard stems (榨菜) or preserved cabbage (moi choi 梅菜). Some even like to steam minced pork with salted dried fish (鹹魚蒸肉餅) and steam minced pork with salted egg (鹹蛋蒸肉餅). Also, some clay pot rice restaurants have steamed pork patties with salted fish on their menu. 

    Traditionally, steamed minced pork is cooked by steaming on top of the stand over a pot of boiling water. However, my parents like to steam pork patties and Chinese steamed spareribs with black bean sauce in rice cookers during the rice cooking process. Steamed pork cake is a little bit sweet, savory dish and great to serve with rice for lunch or dinner.  

    Besides, my parents like to use preserved mustard stems (榨菜), preserved cabbage moi choi (梅菜), dried squid, salted fish and dried shiitake mushrooms to make steamed pork patty. However, my favorite one is steamed minced pork with mushrooms because my kids and husband love it. And, in this recipe, I am going to show how to make steamed minced pork with mushrooms.

    What are the ingredients for steamed minced pork with mushroom?

    The main ingredients are dried shiitake mushrooms, ground pork, oyster sauce, salt, sugar, sesame oil and green onion.

    Cooking tips for how to make steamed minced pork with mushroom:

    • Use 22 small dried shiitake mushrooms or 11 large ones.
    • Soak the dried mushrooms in tap water for 4-6 hours before cooking. I usually soak them the night before, so I can use them the next day. 
    • I like to use ground pork because it is easier and faster. Normally, people chop and mince pork with a knife. 
    • The ground pork that I use is 85% lean and 15% of fat.  
    • It is easier to use a chopper to mince the soaked mushroom. 

    FAQs:

    How long does pork need to steam for?

    Boil some water in a pot, turn on a high fire. When water is boiling, put a stand into the water and put the pork patty plate over the stand. Let it steam for 15-20 minutes. I usually do it for 15 minutes because I try to level the pork patty to around one inch thick. 

    What kind of mushrooms do you use?

    This steam minced pork with mushroom recipe, normally uses dried Chinese shiitake mushrooms. The dried shiitake mushrooms need to be washed and soaked for 4-6 hours before using. dried black Chinese mushrooms

    Can I use other meats?

    This Chinese steamed pork patty or steamed pork cake traditionally uses pork. Personally, I like to use pork for this dish. The texture is a little bit different when you use ground chicken, beef or turkey. 

    Instructions for how to make Chinese steamed minced pork with mushroom:

    Preparation:

    1. Wash and soak 22 small dried Chinese shiitake mushrooms for 4-6 hours before cooking. (Or, wash and soak 11 large one. I usually soak them the night before, so I can use them the next day.)

    2. After soaking the mushrooms, squeeze the water out.

    3. Put the soaked mushrooms into the chopper and chop until it's small pieces. (Because my chopper is small, I separate two times.)

    4. After that, put the chopped mushrooms into a container.

    5. Next, add 1 pound of ground pork into the container. (I use 85% lean and 15% fat.)

    6. Pour ½ tablespoon of sesame oil, 1 teaspoon of sugar, ⅛ teaspoon of salt and 4 tablespoons of oyster sauce into the container.

    7. The following step, mix the sauce with chopped mushrooms and ground pork very well.

    Cooking:

    8. Lastly, put some mixture patty on the plate, level off and the thickness of the patty is around 1 inch. Boil some water in a pot. When the water is boiling, put a stand or rack into the water and put the plate on the stand. Steam it for 15-20 minutes depending on the thickness of the patty. (I normally time it for 15 minutes.) Or, steam it in the rice cooker during the rice cooking process.
