    What is baby bok choy? 

    Bok choy, pak choy or bok choi is brassica rapa subsp. chinensis, a type of Chinese cabbage. It is very common in southern China and Southeast Asia. When people talk about bok choy most of the time, it refers to the bigger white stem bok choi.

    Besides, there are two main types of small bok choy. Baby bok choy is the small one with white stem and green leaves. It is also called siu bok choy in Cantonese which means small white vegetable.

    The other type of pak choi is green stem and leaves, it’s commonly named as qīng cài (青菜) in mandarin or Shanghai bok choi. In Cantonese, it also called siu tang choi (小棠菜). Shanghai bok choy has a mild taste, the leaves are spoon shaped and lighter green. Also, the texture of Shanghai pak choi is less crisp and slimy if overcooked. 

    What should I do with bok choy?

    You can stir fry bok boy, make soup (e.g. fish head, tofu with baby bok choy), steamed or blanched as a side for claypot rice. Also, baby bok choy is the best for stir fry as a side dish or served with rice and noodles.

    Preparing baby bok choy is very important because it has a lot of sand or mud. First, cut them into half. Then, soak them for at least 15 minutes. After that, rinse and wash them a few times (3 times).

    Heat up the wok or pan, pour vegetable oil and add minced garlic. Stir fry the garlic a little bit and let it release the aroma of garlic. Then, put the washed baby bok choy, water, salt and stir fry them until it's soft.
