    What is Chinese cabbage bacon stir fry? 

    Chinese cabbage bacon stir fry is a common and staple food, especially for the village people in China. It is because village people like to make their own Chinese cured pork belly and it’s often used for stir frying with vegetables. Not many Chinese restaurants have this dish on their menu. Besides, stir fry Chinese bacon and cabbage is a great combination and a lot of people love it because of its simplicity and tasty dish. 

    What are the ingredients for Chinese cabbage bacon stir fry? 

    In this simple Chinese cabbage stir fry recipe, the main ingredients are Chinese cured pork belly, cabbage, garlic, chili peppers, vegetable oil and water. I like to add some chili peppers in this dish because it adds some flavor to it.  However, if you cannot handle spicy food, you don’t need to add the chili peppers.

    Cooking tips for how to make Chinese cabbage stir fry:

    • Wash and steam the Chinese cured pork belly for 10 minutes before slicing. In this way, it is easier to cut , the meat will be softer and fragrant will come out more when it is stir frying. 
    • I used 3 dried chili peppers and I removed most of the seeds. The dish is mildly spicy. 
    • You can use and adjust the amount of chili peppers depending on your spiciness. Also, you can use fresh chili peppers. 
    • Stir fry the steamed Chinese bacon with garlic and chili peppers for a little bit. Then, add the cut cabbage. Pour some water and cover with the lid for 5 minutes. After that, stir fry until the cabbage is soft.

    How spicy is this Chinese bacon cabbage stir fry? 

    This dish is mild because I only used 3 dried chili peppers and removed most of the seeds. You can use and adjust the amount of chili peppers depending on your spiciness. Also, you can use fresh chili peppers. 

    Where can I purchase Chinese bacon? 

    You can purchase some at Asian stores or markets. However, I make my own Chinese cured pork belly because I cannot find any around my area. You can see this post for details on how to make homemade Chinese cured pork belly. 

    Do I have to steam the Chinese cured pork belly? 

    You don’t have to. But, when you steam it, the meat is softer and the taste is better. Also, it is easier to cut. Therefore, I suggest washing and steaming it before stir frying. 

    Can I use other vegetables? 

    Yes, you can use other vegetables like bak choy, napa cabbage and gai lan. I use regular cabbage because it’s easier to purchase at regular grocery stores. 

    Instructions for how to make Chinese cabbage bacon stir fry:

    1. Pour 4 cups of water into a pot. Then, wash and steam 2 pieces of Chinese cured pork belly for 10 minutes.

    2. Peel and wash 3 cloves of garlic. Then, roughly cut it into pieces.

    3. After that, wash and cut 3 pieces of dried chili peppers and remove most of the seeds. (You can use and adjust the amount of chili peppers depending on your spiciness. Also, you can use fresh chili peppers instead.)

    4. Next, wash and cut ½ head of medium sized cabbage into chunks. (It's around 1.5 pounds.)

    5. After 10 minutes, remove the Chinese bacon from the steamer.

    6. Slice 1.5 pieces of Chinese bacon. (It is around ½ pound of Chinese cured pork belly.)

    7. Pour 1 teaspoon of vegetable oil into the wok. Turn on the fire low to medium. After that, add the cut garlic, chili peppers into the wok and stir fry them a little bit.

    8. Add the sliced Chinese bacon and stir fry it a little bit.

    9. After, add the cut cabbage into the wok and pour ¼ cup of water. Stir it a little bit and cover the lid for 5 minutes.

    10. Uncover the lid and keep stir fry until the cabbage is soft.
