Garlic chives & eggs is a stir fry dish of Chinese garlic chives and scrambled eggs. It's one of my favorite dishes that I always make for lunch or dinner. And, it's perfect to go with rice.
However, this is a very authentic Chinese dish that not many Chinese restaurants in the states will serve them or people know about this Chinese garlic chives and egg stir fry dish. Because it is a very simple and quick dish everyone can easily make it at home. Besides, garlic chives and eggs stir fry have a great source of fibers and protein.
What are garlic chives?
The scientific name is allium tuberosum which is a species of onion that originated from southwest of China. The common name is garlic chives. In mandarin, it calls jiu cai (韭菜) or Cantonese name gau choi. Garlic chives have a lot of fiber and vitamins, it helps prevent constipation and increase your appetite.

What are the ingredients for Chinese chives and eggs?
I like to make things simple, so I just use a few ingredients in this recipe. The ingredients are garlic chive, eggs, salt and vegetable oil. Besides, I always use garlic chives from my garden because it is fresh and tasty!

- Wash and cut garlic chives into short pieces.
- Beat eggs in a bowl and add cooked garlic chives. Mix them well.
- Use a non-stick pan to stir fry eggs and garlic chives.

Instructions for how to make Chinese scrambled eggs with garlic chives:

1. Wash and cut garlic chives into pieces around two inches long. It's around 2 cups.

2. Then, add ½ tablespoon oil in a pan and turn on fire high. Next, add the cut garlic chives, sprinkle 1/16 teaspoon salt and stir fry for a minute or two. Set it aside.

3. Crack and beat 5 large eggs in a bowl.

4. After that, add cooked garlic chives, ¼ teaspoon of salt into the beaten eggs and mix it well.

5. Pour ½ tablespoon of oil into a non-stick pan. Then, turn on fire and add the egg mixture. Cook until eggs are done.
