Garlic chives & eggs is a stir fry dish of Chinese garlic chives and scrambled eggs. It's one of my favorite dishes that I always make it for lunch or dinner. And, it's perfect to go with rice.
However, this is very authentic Chinese dish that not many Chinese restaurants in the states will serve them or people know about this Chinese garlic chives and eggs stir fry dish. Because it is very simple and quick dish everyone can easily make it at home. Besides, garlic chives and eggs stir fry has great source of fibers and protein.
What is garlic chives?
The scientific name is allium truberosum which is a species of onion originated from southwest of China. The common name is garlic chives. In mandarin, it calls jiu cai (韭菜) or Cantonese name gau choi. Garlic chives have a lot of fiber and vitamins, it helps prevent constipation and increase your appetite.
What are the ingredients for Chinese chives and eggs?
I like to make things simple, so I just use a few ingredients in this recipe. The ingredients are garlic chive, eggs, salt and vegetable oil. Besides, I always use garlic chives from my garden because it is fresh and tasty!

Yes, it does. If you are thinking to grow your own garlic chives, the first couple years won't have much harvest. Then, garlic chives will grow stronger and have more produce.
Instructions for how to make Chinese scrambled eggs with garlic chives:
1. Cut garlic chives into pieces around two inches long. Then, add 1/2 tablespoon oil in a pan and turn on fire high. Next, add garlic chives, sprinkle salt and stir fried for a minute or two. Set it aside.
2. Beat eggs in a bowl. After that, add cooked garlic chives, 1/4 teaspoon of salt into the beaten eggs and mix it.
3. Pour 1/2 tablespoon of oil into non-stick pan. Then, turn on fire and add the egg mixture. Cook until eggs are done.

- 2 cups Garlic chives
- 5 Eggs
- 1/4 teaspoon+ sprinkles Salt
- 1 tablespoon Vegetables oil
