    Lotus roots and pork bone soup (蓮藕豬骨湯) is a traditional Chinese soup. This simple and heartwarming Cantonese lotus root soup recipe has both instant pot and top stove methods.

    Lotus Root and Pork Bone Soup (蓮藕豬骨湯):

    Lotus roots and pork bone soup is a traditional Chinese cuisine. Also, this is one of my favorite soups and I remember my mother likes to make it.

    In Chinese medicine, lotus root is classified as hot and the best to add some green mung beans to even out, so women who have weak and cold bodies are suitable to drink this type of soup.

    Moreover, this Cantonese lotus root soup recipe has both top stove and instant pot pressure cooker methods.

    What are lotus roots?

    Lotus root is a root from lotus plants that are planted on mud or soil in the bottom of the pond. Normally, the leaves float on top of the water surface and the flowers usually rise several centimeters above the leaves.

    Lotus roots nutritions and functions:

    Lotus root has a crunchy texture with little sweet flavor. And, in Asian cuisine lotus roots are often used for salad, pickle, stir fried, soup or sweet candy. Besides, lotus roots are low in calories, rich in dietary fiber, Vitamin C, potassium, thiamine, riboflavin, Vitamin B6, phosphorus, copper and manganese.

    In addition, lotus roots have been used in Chinese traditional medicine to treat a wide variety of illnesses, such as prevent internal bleeding, anti-fungal, anti-inflammatory, reduce fever, anti-anxiety, ease inflammation and help regulate immune systems.

    Cooking tips for making lotus root and pork soup:

    • First, wash and peel lotus roots.
    • Then, cut them about ¼ inch thick. 
    • Some people like to boil pork bones to remove excess blood and fat before making soup. However, I just wash and rinse the pork bones with hot water because it is easier. After that, I use a strainer to remove fat when the soup is done.
    • Also, if you use the top stove method, just add 2 more cups of water and simmer for around 2 hours.

    Can you eat lotus root raw?


    Yes, you can. But it has a slightly bitter taste. The best to boil them first and use for salad, stir fried or make soup.

    How do you clean a lotus root?


    Rinse the roots with water and peel the skin. Then, cut them cross-section into ¼ inch slices or depending how thick you want.

    Instructions for instant pot lotus root pork soup method:

    1. First, wash 2 pounds of lotus roots, peel off skin, and cut them into slices.

    2. After that, put 1.5 pounds pork bones into an instant pot. (Some like to boil the pork bones to remove the blood before making soup.)

    3. Then, add the sliced lotus roots.

    4. Wash and rinse ½ cup of green mung beans. Then, put it into the instant pot pressure cooker.

    5. The following, pour 8 cups of water into an instant pot pressure cooker.

    6. Next, cover the lid and close the vent. Push the manual button and adjust time for 65 minutes at high pressure and natural release. Use a strainer to remove the fat. Then, add ¼ teaspoon of salt or add salt to your taste.

    3. Then, add the sliced lotus roots. 
    4. Wash and rinse ½ cup of green mung beans. Then, put it into the pot.
    5. Next, pour 10 cups of water into the pot. Then, turn on the fire to medium high until the water is boiling. After that, turn the fire to low and simmer for around 2 hours.
    6.  When the soup is done, use a strainer to remove the fat. Then, add ⅓ teaspoon of salt or add salt to your taste.

    • 2 pounds Lotus roots
    • 1.5 pounds Pork bones
    • ½ cup Green mung beans

    • ¼ teaspoon Salt (top stove method use ⅓ teaspoon or add salt to your taste)
