What is gobo soup?
Gobo root soup is quite common in Hong Kong recently. My auntie introduced and taught me this kind of burdock root soup. Also, Asians like to use burdock roots to make soup. Some like to use pork bones or chicken with Chinese herbs to make soup. In Chinese herbal medicine perspective, this burdock root soup is great for cleansing and removing “hot air” in the body. However, this soup is not suitable for pregnant women.
What are gobo roots?
Gobo is a Japanese word which means burdock roots. Some call it arctium lappa and greater burdock. The roots are edible. Besides, greater burdock root is also known as niúbàng (牛蒡) in Chinese. And, it is widely consumed in Japan, Korea and Taiwan. Moreover, Japanese like to use gobo to make appetizer, kinpira gobo which consists of sautéed greater burdock root and carrot.
Dried burdock roots used in folk medicine as a diuretic, diaphoretic, and a blood purifying agent. Because gobo root contains multiple types of powerful antioxidants which protect cells in the body from damage due to free radicals. More and more people like to use burdock roots to make soup.
What are the ingredients for burdock root soup?
In this gobo soup recipe, I only use a few ingredients: gobo roots, carrots, Chinese pearl barley (Job's tears), pork bones and water.

- Wash and use a knife to peel off gobo roots skin.
- Some like to boil the pork bones to remove fat and extra blood before making soup.
- If you use the top stove method, add 2 more cups of water.
- Add salt to your taste.

What does burdock root taste like?
The root is very crisp and has a sweet, mild, and a little muddy taste. When soaking the roots in water for five to ten minutes, it can reduce the muddy taste.
What is Chinese pearl barley?
Chinese pearl barley is also called job's tears, adlay or adlay millet. And, the scientific name is coix lacryma-jobi. On the other hand, other common names such as coix seed, tear grass or yì mǐ in mandarin Chinese (薏米). It is a tall grain-bearing perennial tropical plant and native to Southeast Asia.
Job's tears sell in Asian supermarkets. In addition, job's tears have been used in traditional Chinese medicine to rejuvenate the spleen function and promote urination, alleviate arthritis, stop diarrhea, remove heat and ease the drainage of pus.
Instructions for how to make instant pot gobo root soup:
Preparation:
1. Wash 1.5 pounds of burdock roots and peel off skin. Then, cut them into slices.
2. After that, wash and slice 2 medium sized of carrots.
3. Next, rinse and drain 1 cup of Chinese pearl barley, job's tears.
Cooking:
4. The following, put the sliced gobo roots into the instant pot pressure cooker (my instant pot is 6 quart).
5. Then, put sliced carrots from step 2, a cup of job's tears and 1.5 pounds of pork bones into the instant pot pressure cooker. (Some like to boil the pork bones to remove fat and extra blood before making soup.)
6. Pour 10 cups of water. Close the lid and vent. Then, push the button manual, adjust the time for 65 minutes and natural release pressure.
7. When the soup is done, use a strainer to remove fat. And, add 1 teaspoon of salt. (adjust salt to your taste.)
