Thank you so much for the great response! I'll try out those tricks to reduce the bubbles, but the recipe is fantastic! Everyone has been loving the flavour, I went with strawberry for the boba powder
Chris
I keep getting a layer of bubbles from whipping the cream, when it freezes it creates a light layer and a dense layer, is there a good way to fix this?
Tracy O.
You can try the following ways to reduce bubbles:
Whip at Low Speed: If you're using an electric mixer, start at a low speed to minimize the incorporation of air. High speeds can create more bubbles.
Chill equipment and cream: Make sure your mixing bowl, beaters, and cream are all well chilled before whipping. This can help stabilize the cream and reduce the formation of bubbles.
Use heavy cream: Heavy cream has a higher fat content, which can result in a cream that's less prone to forming bubbles compared to lighter creams.
Fold to remove bubbles: If you've already whipped the cream and it has too many bubbles, you can gently fold it with a spatula to deflate some of the bubbles. Be careful not to overmix it because this can cause the cream to become grainy.
Strain the Cream: If the bubbles are particularly bothersome, you can strain the whipped cream through a fine mesh sieve to remove them.
Remember to mix the mixture a little bit before pouring into the mold. Then, freeze it immediately.
