    What is almond jello?

Almond jello is a classic Cantonese dessert. Often, almond jelly is served with mixed canned fruits. Also, almond jelly is called almond tofu or annin tofu because it's soft and looks like tofu. Besides, in Cantonese it calls heng yan tau hu (杏仁豆腐) or xing ren dou fu in Mandarin.

Traditionally, annin tofu is made of apricot kernel milk. But, it’s often translated as almond milk. Almond jello usually uses agar. However, some people like to use gelatin.

Besides, annin tofu can be made from scratch or using instant mix. In this recipe, I am going to show the easy way to make this Cantonese jello dessert.

What are the ingredients in the Chinese almond jelly recipe?

In this recipe, I used almond milk, agar, sugar, pure almond extract and canned fruits. Some people like to use regular cow milk and gelatin. However, I still prefer to use agar for this dessert recipe.

Cooking tips for how to make annin tofu:

    • Mix well with almond milk, sugar, pure almond extract and agar in a pot. Then, turn on medium small fire heat up until it’s boiling.
    • Pour the mixture with the rest of almond milk. Remember to mix it very well. It is very important.
    • Let it cool down before refrigerating it.
    • The best is to chill it before eating.

    FAQs:

Can I use gelatin in this almond jello recipe?

Yes, you can. But, you need to use the right amount. I haven’t tried to use gelatin in this dessert recipe. And, I still prefer agar in this almond jello recipe because this is what I used to eat when I was a kid.

Is it ok to use instant almond jello mix?

Of course, you can. However, you need to follow the instructions on the box. The recipe that I share in this post is pretty much made from scratch.

Do I have to refrigerate almond jelly?

If you use agar, you don’t have to refrigerate it. When you leave it at room temperature for a few hours, it will become solid. But, it’s better to refrigerate it and serve it cold with canned fruits.
