    Ramen noodles are a classic Japanese cuisine. Wanna know how to make homemade fresh ramen noodles from scratch? This homemade fresh ramen noodle recipe using Philips pasta noodle maker is great for ramen noodle soup or chow mein. Not only is it faster, but also it creates less mess and noodles will be done in around 15 minutes!

    How to make fresh ramen noodles?

    Personally, I love Japanese fresh homemade ramen noodle soup. Also, I like to find an easy and faster way to make homemade fresh ramen noodles. Therefore, in this recipe I am going to share how to make homemade fresh ramen noodles from scratch by using Philips pasta noodle machine. 

    What are the ingredients for homemade fresh ramen noodles? 

    The basic ingredients for homemade fresh ramen noodles are: bread flour, water, egg, salt and kansui (potassium carbonate & Sodium Bicarbonate solution).

    What is Philips pasta noodle machine? 

    My friends told me about Philips pasta noodle machine. After I researched and watched all the videos about the machine. In fact, I am very impressed with this Philips pasta noodles maker.

    In my opinion, it's worth every penny because I use it very often to make noodles and dumplings wrappers. Nevertheless, this noodle machine can make pasta as well.

    Homemade ramen noodles use Philips pasta maker:

    After trying many batches, here is the fresh ramen noodles recipe. Also, you can use the noodles to make chow mein as well.

    In addition, this fresh ramen noodles recipe, the ingredients and measurements are for Philips pasta noodle machine only. Even though I used the same amount of ingredients and used my hands to make them, it didn't turn out the same way. It is because the measurements are for Philips pasta maker. 

    Cooking tips for homemade ramen noodles Philips pasta maker: 

    • I used bread flour instead of all purpose flour because it has a better texture and when you cook them, it will not break easily.
    • Choose 2 cups setting, add 2 cups of bread flour. 
    • Make sure to level off flour and use their flour measuring cup.

    • Add ½ teaspoon salt into the flour and run the machine for a few seconds. Then, pour the liquid. 
    • Remember to use their liquid measurement cup. Crack an egg, put 1 tablespoon of kansui (potassium carbonate & Sodium Bicarbonate solution) and pour water to fill up the 190 ml water mark on the measuring cup. I prefer just a little bit over the 190ml mark, you don’t need to be perfect at 190ml. After that, whisk the liquid mixture very well.
    • Turn on the noodles machine and push 2 cups setting, slowly add the liquid mixture into the Philips pasta machine and let it run.
    • When the noodles are coming out use a container to hold them and cut the desired length.
    • Towards the end, sometimes the dough comes together and is hard to press into the machine. In this case, I will stop the machine, open the lid and use my hands to break down the dough, so it’s easier for the machine to pick up the dough and press into noodles.
    • The noodles at the end are not as pretty as when they first came out, but it is still good and ok.

    FAQs:

    Where can I find Kansui?


    Kansui is also called potassium carbonate & Sodium Bicarbonate solution. And, I bought it at Asian stores.

    Can I use others to replace kansui?


    If you cannot find kansui, you can try using baked baking soda. Put ¼ cup of baking soda in the oven at 250F for an hour. Then, store them in a sealed glass jar. Add 1 teaspoon of baked baking soda into 1 tablespoon of hot water and dissolve it. 

    The texture of noodles is slightly different if you use baked baking soda. Personally, I still like to use kansui. 

    Can I use my hands to make them instead of the noodle machine? 

    This homemade fresh ramen noodle recipe, the ingredients and measurements are for Philips pasta noodle machine only. Although I used the same amount of ingredients and made it by hand, it didn’t turn out the same way. 

    How to cook fresh ramen noodles? 


    Boil some water in a pot or wok. When the water is boiling, put in the fresh homemade ramen noodles. Let it cook for 2-3 minutes. After 2 minutes, check every 30 seconds. 

    Then, drain the noodles and rinse with cold water. If I use the noodles for chow mein I normally boil them for 2 minutes. 

    How to store homemade ramen noodles?


    This homemade fresh ramen noodle recipe, I suggest cooking/boiling the noodles first then refrigerating or freezing them. However, it is best to consume it the same day. 

    Instructions for how to make homemade fresh ramen noodles from scratch:

    1. Put 2 cups of bread flour into the Philips pasta noodle machine.

    2. Then, add ½ teaspoon of salt. Cover the top lid.

    3. Crack a large egg and put it into the measuring cup.

    4. After that, put 1 tablespoon of kansui and pour some water to fill up the 190ml water Mark in the liquid measuring cup. All the liquid should be around the mark 190ml. However, I prefer a little over the mark, but not too much. Just don’t need to be perfect.

    5. Next, mix it well.

    6. Plugin the machine and choose 2 cups. Press the start button and let the machine run for a few minutes.

    7. After the machine runs a few seconds, pour the egg mixture liquid slowly over the holes on the lid. Let the noodle machine run and noodles will come out. Cut the desired length. Noodles will be done around 15 mins for 4-6 servings.

    8. Boil some water in a wok.

    9. When the water is boiling, put the noodles. Let it cook for around 2 minutes and check it every 30 seconds until it cooks. (From my experience, I cook the noodles for around 2-3 minutes. If I use stir fry chow mein, I will cook it for around 2 minutes.)

    10. Drain the noodles and rinse with cold water. You can use the noodles for soup or stir fry them.

    • 2 cups Bread flour (Phillips pasta machine flour measuring cups, 2cups, around 500g)
    • Some Water (After putting the egg and kansui, fill the water up to 190 ml mark. Total liquid around 190ml.)
    • 1 large Egg
    • 1 tablespoon Kansui  (Potassium carbonate & Sodium Bicarbonate solution)
    • ½ teaspoon Salt

    Instructions

        The model is HR 2357/05. There is a newer version that has a built in weight.

      Unfortunately, kansui is not available locally, but it is available online. Do you use the liquid or powder kansui? Is there a difference? Also, which type do you use? (1, 2, or 3?)

        I prefer to use the liquid one because I have been using the liquid kansui for this recipe. Also, Koon Chun is the brand of kansui I use. Click this link https://amzn.to/3PdBPv1
        I haven't tried to use powder kansui. But, I use homemade baked baking soda instead.

          I've made this recipe twice and they both turned out fabulous! I didn't have the kansui the first time. I made the ramen noodles the second time tonight and used liquid kansui. I agree, the kansui made all the difference from ordinary to luscious. The extra pasta is in the freezer ready for another meal.

      Happy Chinese (Lunar) New Year to you! You have restored my faith in my Philips Pasta Maker! I have owned one for at least 2 years and I have never gotten good results with any recipes. I was thinking of getting rid of it and I came across your recipe and step-by-step instructions. The noodles that I just made look perfect. I didn't even dread the clean-up because the dough was perfect and the machine wasn't not a goopy mess. I contribute your recipe and weighing the bread flour.
