    Marie Callender’s fresh strawberry pie is one of my husband's and kids favorite pies that he must buy every time we go visit family in California. Especially during the strawberry season, the strawberries are big. My family love Marie Callender’s fresh strawberry pie because of the big juicy strawberries and sweetness of the glaze. 

    Since we don’t have Marie Callender’s store nearby where we live and can buy fresh strawberry pie. I love to make this type of fresh strawberry pie especially during spring and summer because strawberries are sweet and big!

    There are so many different ways to make fresh strawberry pies. Some like to bake the crust first and fill with fresh strawberry and glaze with jello. However, some like to bake it with strawberry filling. 

    In this easy fresh strawberry glaze with jello recipe, I am going to show and share how to make Marie Callender's fresh strawberry pie. Basically, it just has a baked pie crust. You can make your own pie crust or buy frozen pie crust. Then, fill it up with fresh strawberries and pour strawberry glaze over. Some like to add whipped cream on top of the pie. But, some like to add it on the side when serving the pie.  

    What are the ingredients for easy fresh strawberry pie? 

    In this fresh strawberry pie recipe, I try to make this fresh strawberry pie as close as Marie Callender’s ones. Therefore, I usually use Marie Callender’s frozen pie crust. If you cannot find Marie Callender’s pie crust, you can use other brand pie crust or even make your own.   

    The best is to use fresh big strawberries. For the glaze, I use strawberry flavored jello, sugar, water and cornstarch as a glaze.

    How do I keep my bottom crust from getting soggy?

    If you use a store bought pie crust. First, thaw the pie crust 10 minutes before baking and use a fork to poke holes on the crust. Then, Preheat the oven 400 F and bake it for 12-15 minutes or until it is golden brown.

    After that, let it cool off completely before filling the strawberries. Also, wash and dry each strawberry with a paper towel before placing them into the baked pie crust. Lastly, pour the glaze over when it is ready to serve. 

    Which way do you cut strawberries?

    The way you cut strawberries depends on how you plan to use them in your recipe or dish. Some like to cut it into half, quarter, slice or dice it.

    However, I like to leave it as a whole because it has a better presentation and attractiveness that can serve as a Mother’s and Father’s Day dessert or other special events. Therefore, I simply remove the top leaves.

    How do you prepare the strawberries? 

    Normally, I wash and soak them for a few minutes. Then, I dry them with a paper towel and remove the leaves. 

    How many strawberries do you need for a pie?

    In this recipe, I used 2 pounds of fresh strawberries. It’s around 25 strawberries. 

    How do you store fresh strawberry pie? 

    Put them in the refrigerator 1-2 days. It is best to consume them the same day. Ours usually gone the same day! 

    Is strawberry pie supposed to be served warm or cold?

    Strawberry pie is typically served cold or at a cool room temperature. Chilling the pie helps the filling set and enhances the flavor. Also, it makes it a refreshing and delightful dessert, especially on a warm day!  But, some enjoy it at room temperature. 

    Cooking tips for how to make fresh strawberry pie:

    Pie crust:

    • Thaw the frozen pie crust 10 minutes before baking it. 
    • Use a fork to poke some holes on the crust before baking. 
    • Let the crust cool off before putting in strawberries.

    Strawberries:

    • Try to buy big strawberries if you can. Usually I get mine at Costco. When it is in season, Costco strawberries are big and juicy. 
    • Wash and soak strawberries for a few minutes. Then, dry them with a paper towel and remove the leaves at the top. 

    Glaze:

    • Put a pack of jello, corn starch, sugar and water in a pot. Mix them well. Then, turn on a small medium fire. Keep stirring until it’s boiling. Let it cool down a little bit before pouring over the strawberries in the pie. 
    • The glaze will thicken when it’s cool off. Don’t wait too long. If the glaze hardens, warm it up in the microwave for a few seconds. 
    • You can add more sugar or less depending on your sweetness. I used ½ cup of sugar.

    FAQs: 

    What should I do if my glaze is solidified because I waited too long?

    Simply put the glaze in the microwave for a minute and stir it. It should melt and become liquid again.

    Can I make the glaze ahead of time?

    Yes, you can make the glaze ahead of time. Making the glaze in advance can be a convenient way to streamline the pie-making process when you're preparing a dessert for a special occasion or simply want to save time. 

    Once the glaze is cooked and cooled off, transfer it to an airtight container or a jar with a lid. Seal it tightly and refrigerate or freeze the glaze. You can keep it in the refrigerator for up to a few days in advance. Or, freeze it for a few months.

    If you freeze it, thaw them in the refrigerator or at room temperature. Then, you can reheat it on the stovetop over low heat, stir it constantly and until it reaches a more pourable consistency. Besides, you can warm it up in the microwave for 1 minute or so. Remember to allow it to cool off before pouring over the pie.

      what can i substitute for the corn starch in this recipe? Will arrowroot starch hold up when boiling?

        You can substitute it with potato starch because it’s very similar to cornstarch.

        Arrowroot starch thickens at a lower temperature than cornstarch. It is not weakened by acidic ingredients. It has a neutral taste and is not affected by freezing.

        Also, it is recommended that arrowroot starch mix with cool liquid before adding to a hot fluid. Heat up the mixture until the mixture thickens and remove the heat immediately. Overheating can cause the mixture to thin and break down the arrowroot's thickening property.

        You can try two teaspoons of arrowroot starch for one tablespoon of cornstarch. Or, you may need to adjust the amount of arrowroot starch.

      How long can this glaze last in the he fridge. Can I freeze it

        The glaze can last in the fridge for 3-5 days. I haven't tried to freeze it. I think it is ok to freeze it. You can heat up in the microwave when you fridge it. If you freeze it, I suggest defrosting it and warm in the microwave or reheat on the top stove.
