Almost every culture has some sort of pancake in different forms. Western pancakes tend to be sweet and mostly served with syrup. Asian and Eastern pancakes are more savory.
My kids love this Chinese pancake that I made. They especially love dipping it in hoisin sauce and eating it. They asked me what is this called? I told them it's a Chinese pancake. Actually, it is very similar to Korean pajeon and Japanese okonomiyaki.
What are the ingredients for Chinese pancakes (煎餅)?
This type of Chinese pancake is made of egg, flour, water, vegetable and meat. In this Chinese pancake recipe, I like to use cabbage and carb sticks. But, you can use different vegetables and meat.
Cooking tips for homemade Chinese pancake:
- Cook the cabbage a little bit until it’s soft.
- Mix the batter very well to make sure no lumps.
- Then, add cooked cabbage and crab meat and mix it.
- Use a non-stick pan to pan fry, so it won't stick on the pan.
- Besides, make sure the pan is hot enough before pouring the batter.
- Pan fry both sides until it's golden brown. Remember to use medium small fire to pan fry it.
- Mix the batter well each time before pouring into the pan.

1. Shred or slice a half of medium small cabbage into strips. You need around 3 cups.
2. Cut 3 long imitation crab sticks into pieces.
3. Put ½ tablespoon of vegetable oil in a non-stick pan. Then, add the shredded cabbage and 1/16 teaspoon of salt.
4. Stir them a little bit and cover with a lid for 1-2 minutes until it's soft. (Do not need to be very soft.)
5. In a mixing bowl, add 1 cup all purpose flour and 1 large egg.
6. Next, add ¼ teaspoon of salt and 1 & ¼ cups of water.
7. Mix the batter very well. Make sure no lumps.
8. After that, put the cut crab meat and cooked cabbage into the batter.
9. Mix the batter and ingredients well.
10. Pour 1 tablespoon of vegetable oil into a non-stick pan and turn on medium low fire.
11. After, pour some batter mixture into the pan. Let it cook until it golden brown and flip the other side (remember to turn the fire to medium low).

- 1.5 tablespoons Vegetable Oil
Stir fry Cabbage:
- ½ tablespoon Vegetable oil
- 3 cups Cabbage (Half of medium small sized cabbage)
- 1/16 teaspoon Salt (For stir fry cabbage)
Batter:
- 1 cup All purpose flour
- 1 Egg (Large)
- 1&¼ cups Water
- ¼ teaspoon Salt (Add in the batter)
DIPPING SAUCE:
- some XO sauce, Chili oil or hoisin sauce
