    Roast Duck (烤鴨) is popular in Chinese cuisine. This Chinese style roast duck recipe show you how to bake a juicy and tender duck in an oven.

    Roast Duck (烤鴨)

    People cook duck in different type of dishes around the world, but the most popular way to cook duck is roasting. Roasting is a part of the cooking process to aid in crisping the skin.

    Roast Duck is predominant in Chinese cuisine and Peking duck is very famous Chinese dish. Also, peking duck meat is often eaten with onion, cucumber and sweet bean sauce with bun rolled around the fillings.

    Some people like to eat with pickled radish and use hoisin sauce, salt or plum sauce as a dipping sauce.

    Chinese Style Roast Duck (烤鴨)

    There are so many different ways to roast a duck. Normally, Chinese roast a duck in an oven and the duck is hanging over. Besides, it uses coal and slowly roast the duck so the skin is crispy and the meat is tender.

    This Chinese roast duck recipe I am going to share how to use an oven to roast a duck at home. And, this is an Asian Chinese roast duck because I use Asian spices to marinate the duck.

    How to roast a duck?

    Since I don’t have a commercial oven like Chinese restaurant that can hang the duck in the oven.

    Therefore, I like to use the same principle as I roast a chicken at home. I use a bundt cake stand to put the duck up straight on the stand and roast it in the oven.

    In that way, the duck can be roasted nicely and received even heat, so the skin is golden brown and the meat is tender.

    Cooking tips for how to roast a duck:

    • Clean the duck very well and take out all the guts and organs.
    • Marinated the duck at least few hours. The best result is to marinate the whole duck over night. Remember to flip the other side and marinated it after a few hours.
    • Temperature and timing are very important and crucial to roast a nice duck. If you don’t want the duck wings got burned, I recommend to use a piece of foil to wrap around the wing and bake the duck at 375 F for an hour. After that, remove the foil and increase the temperature 425 F and bake for another 15-20 minutes until the duck is golden brown and it reaches 165 F internal temperature.

    How do you know when the duck is cooked?

    Some people like to cook duck medium raw. However, for health safety, the best is to cook all poultry and reach 165 F internal temperature.

    What temperature and how long do you cook a duck?

    It depends how big is the duck. For a 5.5 pounds of whole duck, I bake at 375 F for an hour. After that, change the temperature to 425 F and bake 15-20 minutes until it reaches 165 internal temperature and nice golden brown. Time can be changed depends on what temperature you use as well. Usually, I calculate every 13 minutes per pound to get the rough time.

    How long should rest the duck after cooking?

    Normally, I wait around 5-10 minutes, then cut it.

    Instructions for how to bake a Chinese style duck in an oven:

    1. In a mixing bowl, add marinate sauce: soy sauce ½ cup, hoisin sauce ½ cup, dark soy sauce 2 tablespoons, water 1 cup, garlic 2 cloves grind, ginger 3 slices grind, anise 3, clove 3, and five spices ⅛ teaspoon. Mix them well.

    2. Then, wash and clean the duck very well, remove all the guts and organs.

    3. After that, put the whole duck into the marinated sauce for few hours (the best result is overnight). Try to flip the other side after a few hours.

    4. Preheated the oven at 375 F. Then, put the duck on a cake stand like a bundt cake mold to roast a chicken from previous recipe.

    5. Wrap the wings with foil to prevent the wings get burned. Next, bake the duck at 375 F for an hour. After that, remove the foil and change the temperature to 425 F and bake 15-20 minutes until it reaches 165 internal temperature and nice golden brown.

    6. Rest for 10 minutes and chop it into pieces.

      Could you please explain why you don't score or price the duck skin to release fat?

        I don’t score it because it will keep the moisture when baking in the oven at high temperature. However, some people like to dip the whole duck into hot boiling water to make the skin shrink.
        Then, let it dry, brush some maltose water and bake it. This way also can help the duck to have crispy skin. I will update this post in the future with detailed steps and a video. Thank you for your question!

      I only marinated this for 9 hours and it was so good. I can see how much better it would have been if marinated overnight and inside the cavity. My duck fell over in the bundt pan so I had to place it on a rack. I started it breast side up, then flipped it over half way through. I then flipped it again once I turned the heat up. Will definitely make this again!

        Thank you for your comment! Normally, I try to move around the duck legs to find a balance point, so the duck won't fall over. I understand the bigger the bird is, the harder to put on the stand. I tried on the turkey around 8-12 pounds.
