    Red bean mochi or lo mai chi (糯米糍) is a classic Asian’s sweet snack or dessert. The idea is very similar to red bean paste sticky rice cake. But, it cooks in a different way. Like red beans?     What is red bean mochi?

    Red bean mochi is a popular Asian sweet dessert or snack. Different areas people named them differently. In Japan, it named daifuku (大福). Mochi (麻糬) is a Japanese word means rice cake. In Cantonese, it also called lo mai chi (糯米糍) or nuo mi ci in Mandarin.

    Most of the time the filling is sweet. Often, people use red bean paste as a filling for red bean sticky rice cake and red bean mochi. However, some like to use black sesame seeds paste or crumble peanuts with sugar.

    Besides, mochi ice cream is another famous Japanese ice cream dessert that most Asians love as well.

    What are the ingredients for red bean lo mai chi (糯米糍)?

    The main ingredients are glutinous rice flour, water, sugar and red beans.

    In this red bean mochi recipe, I used coconut milk, glutinous rice flour and sugar to make the flour dough. For the sweet filling, I used adzuki beans and sugar.

    Cooking tips for how to make instant pot red bean mochi:

    • Mix glutinous rice flour, coconut milk and sugar very well. Then, put in an instant pot Manual for 20 minutes at high pressure and natural release.
    • Put some glutinous rice flour in a tray and put the flour dough in (be careful it is still hot). Try to flatten the dough evenly and divide them into 12 pieces.

    • Dust some glutinous rice flour when the dough is sticky.

    How long does homemade mochi last?


    It's best to consume them fresh and eat it the same day. It can be put in the room temperature for up to 24 hours.

    How do you stop lo mai chi from hardening?


    Put a plastic wrap around each individual or cover the whole plate.

    Can I put mochi in the refrigerator?


    Not recommended because it will harden glutinous rice dough.

    What is the white powder on mochi outside?


    It is glutinous rice flour. Dust some, so it won’t stick on the paper or hands. Also, some people like to stir fry the glutinous rice flour before using it for dusting.

    How do you eat daifuku?


    The best is to bite on the mochi or cut them into pieces for kids, so they won’t choke on them when eating it. Try not to put the whole thing in your mouth because it will cause a choking issue.

    Instructions for how to make instant pot red bean lo mai chi:

    1. Put 1 cup glutinous rice flour into a container, then add 1 cup coconut milk and ¼ cup sugar. Mix them very well.

    2. After that, put a cup of water and a rack into the pressure cooker. Then, put the flour mixture in the instant pot, close the lid and vent. After, push the button manual, adjust time for 20 minutes at high pressure and natural release.

    3. While waiting for the flour dough, roll the red bean paste into small balls. (You can make the sweet red bean paste the night before and refrigerate it.)

    4. When the flour dough is done, take it out and mix them a little bit.

    5. Next, put some glutinous rice flour (I put ½ cup) into a tray and spread them evenly. After, put the cooked flour dough in the tray and flatten the dough. Divide the dough into 15 pieces.

    6. After, take a piece and wrap with a sweet red bean ball. (Dust more flour when sealing the end, so it won’t be too sticky.)

    Flour Dough:

    • 1 cup Glutinous rice flour
    • 1 cup Coconut milk

    • Some Glutinous rice flour (For dusting the dough. I put ½ cup, you can try ¼ cup)

      Hello! Can I double the recipe or will I need to do it twice?

        Hi Mark,

        You can double the recipe, but you may need a bigger container and increase the time a little bit because of the thickness. I suggest doing 30 minutes and see if it is ok.
