Soak 16 strawberries (13 oz) for 10 minutes and wash it 2-3 times.
After that, remove the leaves and cut them into pieces. (The chopped strawberry is around 2 cups, 12 oz.)
Put 1 stick (½ cup) of butter into the bowl. Then, melt the butter in the microwave for 10-20 seconds. Mix it and make sure it is completely melted because it is easier to mix the flour batter.
In a mixing bowl, put 2 cups of all purpose flour.
Then, add 1 cup of regular white sugar, ½ teaspoon of salt and 2 teaspoons of baking powder. Mix it very well.
The following step, crack 2 large eggs (4 oz) into the flour mixture.
Add 1 teaspoon of vanilla extract, ½ cup & 2 tablespoons of milk and the melted butter from step 3 into the flour mixture.
Mix it well and the best is to use an electric mixer because the batter is thick
Next, add the chopped strawberries from step 2 into the batter mixture.
Pour ½ cup (3 oz) of white chocolate chips into the batter.
Fold the fresh strawberries and white chocolate chips into the batter and mix it well.
For the topping crumbs, put ⅓ cup of brown sugar, ⅓ cup of white sugar, ½ cup of all purpose flour and 1 teaspoon of cinnamon powder into the bowl. Mix it well.
Then, melt ½ stick (¼ cup) of butter in the microwave for 10-20 seconds. Pour the melted butter into the topping mixture.
Use the fork to mix the topping crumbs well.
Place the 16 cupcake liners into the cupcake tray. (You need two cupcake trays because it can make 16-18 muffins.)
Scoop 2 tablespoons full of batter mixture into the cupcake liners.
Sprinkle a tablespoon of the topping crumbs from step 14 on the muffin batter.
Also, sprinkle ¼ cup (2 oz) of white chocolate chips on top of the muffin batter.
Lastly, preheat the oven at 375 F, bake at 375 F for 16-18 minutes.
