Expert Tips for the Best Instant Pot Soy Sauce Chicken Wings:
Use split chicken wings (party wings): This recipe uses 1½ pounds of split chicken wings (party wings), but you can easily cook more if your Instant Pot has enough room. You don't need to increase the pressure cooking time when adding more wings, as long as they are not packed above the Instant Pot's maximum fill line.
Frozen wings work well: There's no need to thaw the chicken wings before cooking. Simply place the frozen wings in the Instant Pot and pressure cook for 5 minutes on High Pressure. Since chicken wings are relatively small, they cook through quickly even when frozen.
Coat the wings evenly: Whisk the braising sauce until the sugar dissolves, then toss the chicken wings well so every piece is evenly coated before pressure cooking.
Let the pressure release naturally: After cooking, allow the pressure to release naturally. This helps the chicken wings stay tender and juicy while giving them more time to absorb the flavorful braising sauce.
Skim the excess fat: Use a skimmer or spoon to remove any excess fat from the surface of the braising sauce for a cleaner, richer flavor.
Add green onions before serving: Stir in the sliced green onions just before serving to add freshness, color, and aroma.
