This king oyster mushroom stir fry is a quick, healthy, and flavorful dish that’s perfect for busy weeknights. King oyster mushrooms are known for their thick, meaty texture and savory, umami-rich flavor.
Rinse and cut 4 king oyster mushrooms (1.5 pounds) into strips.
Peel and cut 4 slices of ginger (2 oz).
Wash and cut 2 sticks of green onions (1 oz) into strips.
In a container, add 2 tablespoons of oyster sauce, 2 tablespoons of soy sauce, ½ teaspoon of garlic powder, and 1 tablespoon of sesame oil. Mix it well.
Pour 1 tablespoon of vegetable oil into the pan, then turn the heat to medium-high. After that, add 4 slices of ginger and stir-fry for a little bit.
Add the cut king oyster mushrooms from step 1 into the pan and add 2 teaspoons of cooking rice wine. Cover the lid and let it cook until the mushrooms have shrunk and reduced in size (1-2 minutes).
After that, pour the sauce mixture from step 4 into the mushrooms. Let it cook until it’s soft.
Lastly, add the cut green onions from step 3 to the mushrooms, stir them a little bit, and it is ready to serve.
