    What are garlic cheese breadsticks?

    Garlic cheese breadsticks are a delicious appetizer or side dish commonly found in pizza restaurants or Italian restaurants. Most people made garlic cheese breadsticks by rolling out pizza dough into long and thin sticks. Then, they are brushed with garlic butter and sprinkled with grated mozzarella cheese.

    The dough sticks are then baked until golden and crispy. Also, they are often served with marinara sauce or ranch dressing for dipping sauce. Garlic cheese breadsticks are a popular choice for sharing or as a tasty accompaniment to HK borscht soup, chicken gnocchi soup or hearty soup.

    Recently, I have been making a lot of bread. And, I came up with this cheesy garlic breadsticks recipe by accident. Surprisingly, it turned out fluffy, soft and delicious garlic cheese sticks just like the one I have tried in Hong Kong bakeries. 

    This is the best homemade cheesy garlic breadsticks because it is made from scratch. Also, the dough is the key, not like regular pizza dough. Therefore, it makes these garlic cheese breadsticks tasty, fluffy and soft. Besides, a fresh dough covered with garlic butter, herb and loaded with melted mozzarella cheese. My kids love this homemade cheesy garlic breadsticks and they said it's better than at a store!

    What goes with homemade cheesy garlic breadsticks?

    These warm, fluffy and soft garlic cheese breadsticks are the best to go with salad, a side for prime rib roast, BBQ pork ribs and soup such as HK borscht soup, chicken gnocchi soup or hearty soup.

    How to store cheesy garlic breadsticks?

    When the breadsticks cool off, the best to store them with a ziplock bag or use aluminum foil to wrap them. You can refrigerate or freeze them. They can stay fresh in the refrigerator for up to 3-7 days. Or, they can last in the freezer for about 1-2 months.

    When you're ready to enjoy the breadsticks, preheat the oven to 350°F and place the breadsticks on a baking sheet. Bake for about 8-10 minutes or until heated through and crispy. Alternatively, you can reheat them in a toaster oven, air fryer or microwave. Although the texture may not be as crispy as when freshly baked.

    Can I make ahead and freeze them?

    Yes, you can make garlic cheese breadsticks ahead of time and freeze them for later use. I will make and bake it as usual. When they cool off, I store them in a ziplock bag and freeze them.

    What are the ingredients for garlic cheese breadsticks?

    This homemade garlic cheese breadsticks recipe, the ingredients for the dough are yeast, sugar, vegetable oil, water, bread flour, salt, garlic powder, vital wheat gluten and dough enhancer.

    For topping, the ingredients are butter, garlic powder, salt, dried parsley and mozzarella cheese.

    Cooking tips for how to make homemade garlic cheese breadsticks from scratch:

    • Recommend to use a Bosch mixer. It will be easier.
    • Let the yeast mixture wait for 5 minutes.
    • Then, add the flour mixture slowly into the yeast mixture and let the dough mix for 5 minutes.
    • Let the dough rise for 45 minutes to 1 hour at room temperature. My trick is to preheat the oven to 200F and turn off. Then, put the dough in the oven covered with a wet cloth and let it rise for 20-30 minutes. It’s faster, so you don't need to wait too long.
    • Divide the dough into 13 pieces and roll it into a long rope shape.
    • Put a parchment paper on a cookie sheet and spray some oil. Lay the long rope shaped dough on the tray cover with a wet cloth and let it rise for 15-30 minutes. (I preheated the oven to 200F and turned it off. Then, let them rise in the oven again.)
    • Melt butter in the microwave for 20 seconds and mix salt and garlic powder.
    • After the dough rises, brush melted garlic butter, sprinkle with dried parsley and mozzarella cheese.
    • Preheat for 400 F and bake for 12-16 minutes. (I did around 15 minutes.)

    FAQs:

    Do I have to add vital wheat gluten and dough enhancer?


    Personally, I suggest adding them. It really does make the dough texture different and the breadsticks are soft and fluffy. These are the key ingredients if you want a fluffy and soft texture of breadsticks.

    Can I use regular flour?


    I still recommend using bread flour if possible. In general, I prefer and like to use bread flour for bread. It does make the bread taste delicious.

    Can I use other herbs?


    Yes, you can use other dried herbs. I used dried parsley in this recipe.

    Instructions for how to make homemade garlic cheese breadsticks from scratch:

    Dough: 

    1. Pour 1 cup and 3 tablespoons of water into the Bosch mixer. Then, add 1 tablespoon of yeast, 2 tablespoons of sugar and 3 tablespoons of vegetable oil. Turn on the lowest setting (1), to mix them a little bit. Let it wait for 5 minutes.

    2. While it's waiting, put 3 cups of bread flour, 1 and ยพ teaspoons of salt, ยฝ teaspoon of garlic powder, ยฝ tablespoon of vital wheat gluten and ยฝ tablespoons of dough enhancer into a big bowl and mix them well.

    3. After that, turn on the mixer at the lowest setting #1, slowly add the flour mixture into the yeast mixture. When the dough is coming together, increase the higher setting to #3. Let it run for 5 minutes.

    4. Take the dough out and put it into a bowl and cover with a wet cloth. Let the dough rise for 45 minutes to an hour at room temperature. (My trick to speed up the time for dough rising is to preheat the oven at 200F and turn off. Then, put the dough in the oven covered with a wet cloth and let it rise for 20-30 minutes.)

    5. After, the dough rises double in size.

    6. Next, divide the dough into 13 pieces.

    7. Roll the pieces into a long rope shape.

    8. Put a parchment paper on a cookie sheet and spray some oil. Then, lay the rolled dough on the tray and cover with a wet cloth to let them rise again. (My trick to speed up the time for dough rising is to preheat an oven for 200F and turn off. Then, put the dough in the oven covered with a wet cloth and let it rise for 15-30 minutes.)

    9. In the meantime, melt 4 tablespoons of butter in a microwave for 20 seconds. Then, add 1 teaspoon of garlic powder, ยผ teaspoon of salt and mix well.

    10. The dough rises again and doubles its size. Preheat the oven at 400 F.

    11. Brush the melted garlic butter from step 9 on the dough.

    12. After, sprinkle 2 teaspoons of dried parsley on the dough.

    13. The following, sprinkle one cup of mozzarella cheese on the dough. And, bake them at 400F for 12-16 minutes. (I did it for around 15 minutes.)
